Fully 38% of Americans either actively include or avoid gluten in their diets. Though demographic differences are fairly minor, Millennials and Xers do tend to be more gluten-aware than their parents: 25% of 18- to 49-year-olds try to include it, compared to only 17% of those 50 and older.
